Strawberry Jam
trust me, it's a goodie. Great on scones.

- 1 kg strawberries fresh/thawed
- 2 cups sugar
- 2 Tbsp lemon juice
pour all ingredients into pot and mix
let sit at room temp for 1 hour (mascerate)
turn on heat to med-high and cook at a simmer for 30-40 minutes
foam is normal during simmering. Keep simmering until foam is gone
place a spoonful of jam onto a plate that has been in the freezer.
Run your finger along the plate (through the jam). If the jam doesn't flood back straight away, the jam is done.
If you have a candy thermometer, the jam is done at 105°C (220°F)
NOTE: use any berry you'd like
