Ingredients
Cake

butter
melted

caster sugar -

eggs
add to above one at a time, then add

natural yogurt
can use lemon yogurt

lime or lemon juice
I usually use lemon

lime rind
finely grated - whisk these together until smooth.

plain flour

baking powder - sift together then add to wet mix. Don’t over mix
Icing
1 ½
cups
icing sugar
1 ½
tbsp
line or lemon juice

Whisk together and top cakes.
Instructions
whisk sugar and butter to combine
add eggs one at a time
add the yogurt
whisk in lemon juice and lime rind
sift in dry ingredients and mix
Spoon into 2 greased, lined loaf tins (skinny ones) or makes about 18 medium cupcakes.
For a cake bake about 1 ¼ hours at 160.
For cupcakes, about 25 minutes at 160.
Cake is cooked when it bounces back when pressed in the center and skewer comes out clean.
