Garlic Butter Potatoes

- 1½ lbs new or small potatoes
- ¼ cup melted butter
- ⅙ cup olive oil
- 3 cloves garlic minced
- salt & pepper
- 1 cup mozzarella shredded
- ½ cup parmesan grated
- ¼ cup parsley
Preheat oven to 190°C
line baking sheet with baking paper
make small slits in each potato, like an accordian
place potatoes on baking sheet
in a bowl, whisk together butter, oil and garlic.
brush mixture over potatoes then season with salt and pepper
bake for 20 minutes
brush potatoes with more of the mixture then sprinkle parmesan and mozzarella
bake for 25 minutes
garnish with parsley
