Strawberry Jam

trust me, it's a goodie. Great on scones.

Ingredients
  

  • 1 kg strawberries fresh/thawed
  • 2 cups sugar
  • 2 Tbsp lemon juice

Instructions
 

  • pour all ingredients into pot and mix
  • let sit at room temp for 1 hour (mascerate)
  • turn on heat to med-high and cook at a simmer for 30-40 minutes
  • foam is normal during simmering. Keep simmering until foam is gone
  • place a spoonful of jam onto a plate that has been in the freezer.
  • Run your finger along the plate (through the jam). If the jam doesn't flood back straight away, the jam is done.
  • If you have a candy thermometer, the jam is done at 105°C (220°F)
  • NOTE: use any berry you'd like
