Lime & Yogurt Cake/Cupcakes

Ingredients
  

Cake

  • 220 g butter melted
  • 1 ½ cups caster sugar –
  • 2 eggs add to above one at a time, then add
  • 1 cup natural yogurt can use lemon yogurt
  • ¼ cup lime or lemon juice I usually use lemon
  • 1 ½ tbsp lime rind finely grated – whisk these together until smooth.
  • 2 ¼ cups plain flour
  • 2 tsp baking powder – sift together then add to wet mix. Don’t over mix

Icing

  • 1 ½ cups icing sugar
  • 1 ½ tbsp line or lemon juice
  • 1 tbsp water
  • Whisk together and top cakes.

Instructions
 

  • whisk sugar and butter to combine
  • add eggs one at a time
  • add the yogurt
  • whisk in lemon juice and lime rind
  • sift in dry ingredients and mix
  • Spoon into 2 greased, lined loaf tins (skinny ones) or makes about 18 medium cupcakes.
  • For a cake bake about 1 ¼ hours at 160.
  • For cupcakes, about 25 minutes at 160.
  • Cake is cooked when it bounces back when pressed in the center and skewer comes out clean.
