Lime & Yogurt Cake/Cupcakes

Ingredients
Cake
- 220 g butter melted
- 1 ½ cups caster sugar –
- 2 eggs add to above one at a time, then add
- 1 cup natural yogurt can use lemon yogurt
- ¼ cup lime or lemon juice I usually use lemon
- 1 ½ tbsp lime rind finely grated – whisk these together until smooth.
- 2 ¼ cups plain flour
- 2 tsp baking powder – sift together then add to wet mix. Don’t over mix
Icing
- 1 ½ cups icing sugar
- 1 ½ tbsp line or lemon juice
- 1 tbsp water
- Whisk together and top cakes.
Instructions
- whisk sugar and butter to combine
- add eggs one at a time
- add the yogurt
- whisk in lemon juice and lime rind
- sift in dry ingredients and mix
- Spoon into 2 greased, lined loaf tins (skinny ones) or makes about 18 medium cupcakes.
- For a cake bake about 1 ¼ hours at 160.
- For cupcakes, about 25 minutes at 160.
- Cake is cooked when it bounces back when pressed in the center and skewer comes out clean.
