Strawberry Jam
trust me, it's a goodie. Great on scones.
Ingredients
- 1 kg strawberries fresh/thawed
- 2 cups sugar
- 2 Tbsp lemon juice
Instructions
- pour all ingredients into pot and mix
- let sit at room temp for 1 hour (mascerate)
- turn on heat to med-high and cook at a simmer for 30-40 minutes
- foam is normal during simmering. Keep simmering until foam is gone
- place a spoonful of jam onto a plate that has been in the freezer.
- Run your finger along the plate (through the jam). If the jam doesn't flood back straight away, the jam is done.
- If you have a candy thermometer, the jam is done at 105°C (220°F)
- NOTE: use any berry you'd like
