Citrus-Marinated Fish Tacos

Use the best, freshest corn tortillas you can (heat/char them briefly in a dry skillet or over a gas burner, for extra flavor and flexibility). In such a simple dish, they make all the difference.

Ingredients
  

Tacos

  • 2 cloves garlic minced
  • 3 Tbsp fresh orange juice
  • 1 tsp dried oregano
  • ½ white onion sliced plus more diced for serving
  • ¼ cup corriander leaves and stems
  • ¼ cup extra virgin olive oil
  • 3 Tbsp fresh lime juice
  • 450 grams mild white-fleshed fish (skinned)
  • salt
  • pepper
  • 4 corn tortillas

Slaw

  • â…› head of greem/purple cabbage shredded 2 cups
  • 2 Tbsp corriander leaves and stems chopped
  • 1 Tbsp lime juice
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

Tacos

  • whisk garlic, orange juice, oregano, onion, coriander, oil and lime juice in a bowl
  • season fish with salt and pepper.
  • spread half of the marinade over the bottom of a glass baking dish
  • place the fish on top and spoon over remaining marinade.
  • cover and refrigerate for 30 mins; turning the fish over once

Slaw

  • toss together the cabbage, coriander, half the lime juice, honey, salt and pepper in a bowl until evenly coated
