Sticky Date Pudding
It's the sticky date you actually want
Ingredients
Pudding
- 1 ½ cups dates chopped, pitted
- 1 cup boiling water
- 1 tsp baking soda
- 100 g butter chopped
- ¾ cup brown sugar
- 2 eggs
- 1 cup self raising flour
Toffee Sauce
- 150 g butter chopped
- 1 cup single pouring cream
- 1 ½ cups brown sugar
Instructions
Pudding
- Preheat oven to 180°C
- Place dates, water and baking soda in a bowl and allow to stand for 5 mins.
- Place the date mixture in a bowl or food processor with the butter and sugar and process until well combined.
- Add the eggs and flour and process until just combined.
- Pour into a lightly greased 26cm tin lined with baking paper.
- Bake for 30-35 mins or until cooked when tested with a skewer.
- Cool in tin for 10 mins.
Sauce
- place butter, cream and sugar in a saucepan over medium heat and stir until the butter has melted.
- Bring to boil and cook for 5 mins or until thickened slightly.
- Spoon over pudding and top with cream or serve with ice cream.
