Korean Popcorn Chicken

Korean style popcorn chicken recipe. It's a type of Korean fried chicken! It's crunchy and coated with sticky, sweet, tangy and spicy sauce! A perfect crowd pleaser!

Ingredients
  

Chicken

  • 500 g chicken breast/thigh cut into bite sized pieces
  • 1 Tbsp rice wine
  • 2 tsp ginger powder
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 1 cup potato/corn starch
  • oil for deep frying rice bran

Sauce

  • 5 Tbsp tomato sauce
  • 1 ½ Tbsp gochujang
  • 2 Tbsp honey
  • 2 Tbsp dark brown sugar
  • 1 Tbsp soy sauce
  • 2 tsp sesame oil
  • ½ tsp minced garlic

Instructions
 

Chicken

  • place chicken in a bowl and add rice wine, ginger, salt and pepper; mix.
  • cover bowl with gladwrap and refrigerate for 30mins
  • coat each piece of chicken with starch powder
  • pour oil in pot until it reaches 175C (or boiling)
  • deep fry chicken pieces until golden & cooked through (2-3 mins)
  • set aside on paper towel to drain
  • NOTE: double fry for extra crunch

Sauce

  • mix all ingrdients in a bowl
  • bring sauce to boil (1-2 mins)
  • toss chicken in sauce
  • garnish with crushed nuts or sesame seeds
