Easy Mayonnaise
Super tasty and can be made in 2 minutes!
Equipment
- immersion (stick) blender
Ingredients
- 1½ tsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- ½ tsp lemon juice
- 1 egg
- 1¼ cups neutral oil vegetable, grape-seed, olive (if you must)
Instructions
- add everything except the oil to a tall, skinny container (maybe a highball glass)
- insert the immersion blender
- pour in ¾ cup of oil (it should sit on top of everything and not mix)
- turn on the blender and slowly lift it so it mixes more of the oil until it is all emulsified.
- pour the remaining oil on top of the mayo and blend again until emulsified.
- For a thicker mayo, add more oil
- NOTE: mix in a Tbsp of smoked paprika post-emulsification for a great topping sauce!
